Baked salmon with sweet cherry tomatoes 

This is my first post, and I am going to start with one of my favourites Paleo recipes. Baked salmon fillets with sweet cherry tomatoes is so easy to cook, and it is so tasty!

Just put 1 or two salmon fillets on a strong kitchen foil and cover with a handful of chopped good quality tomatoes (I use the sugar drop tomatoes from Tesco). Add few basil leaves, garlic and sprinkle with salt, black pepper and if you like a bit of a kick add some red chilli flakes

Drizzle some good quality extra virgin olive oil, then fold the foil like you do when you wrap up Christmas presents 😉


Place it in a hot oven and cook for approx. 12 minutes. When ready, take it out and eat the fish directly from the foil.

If you like you can squeeze some lemon over it.
