Fried egg with Parma Ham and garden peas guacamole 

Cooking for me is about experimenting with food, it is about trying new combinations of ingredients. Sometimes the experiments are successful and sometimes they only require some twicking. Some other times there is nothing you can do, but merely realise that this time around has not work…

Yesterday I was feeling very inventive, this normally happens to me when I have a limited amount of ingredients available.

I had some Parma Ham, 1 avocado, 1 last eggs but no fresh veggies available.

So, I cooked some garden peas in butter  with some fresh basil leaves (in every household there should alway be a bag of frozen garden peas in the freezer! 😉)

Add salt and paper and cook until well cooked, adding a bit of water from time to time if they get too dry.

Mash a ripe avocado in a bowl, add a chopped spring onion, then mix in the peas and mash until creamy (the peas will remain a bit chunky). I then added a pinch of salt, a squeeze of lemon (and a dash of Tabasco).

Serve it with a fried egg covered with thin strips of Parma Ham.
