Grilled chilli and ginger prawns with turmeric aubergines and courgettes

This is not the ordinary Paleo dish made with eggs and avocado, it is something different that I tried a couple of days ago. There is a very interesting combination of flavours in this super healthy Paleo dish.

First of all, fry two finely chopped garlic cloves in olive oil for a couple of minutes. I use a large non stick pan with a lid for this dish.

Add 1 chopped courgette and 1 chopped aubergine. Season with salt, black pepper and a teaspoon of turmeric powder and a dash of Extra Virgin olive oil.

Stir well, then cover with the lid and cook until the vegetables are tender.

For the fish, marinate a dozen of pealed prawns with chopped ginger, red chilli flakes and lemon.

Then add the prawns to skewers.

Cook the prawns on a hot grill or barbecue for 5 minutes on each side.

When ready, serve the prawns with the aubergines and courgettes.
