Steamed vegetables warm salad

This is how you make a healthy and tasty steamed vegetables warm salad, that you can eat on its own for a light lunch or have with some meat of fish as your main course.

The salad can be stored in the fridge for a couple of days. It is also very yummy eaten cold.

Ingredients (serve 2-3 people)

  • 3-4 peeled and chopped carrots
  • A bag of green beans, washed and cut in halves
  • The florets of a whole broccoli 
  • A handful of olives
  • 2-3 sliced cooked beetroots
  • A bunch of parsley, finely chopped
  • The juice of half lemon
  • Extra Virgin Olive Oil
  • Salt and pepper

Preparation

Place the carrots, the broccoli and the green beans in 2 bamboo steamers.

Pile the steamers up on a pan filled with boiling water and cook for approximately 7-8 minutes, until the veggies are cooked but are still a bit crunchy.

Place the veggies in a large salad bowl with the parsley, the beetroots and the olives. Add the lemon, olive oil, salt and pepper to taste.


Stir well. Serve the salad and enjoy.
